From what I can put together, based on https://clarinetpages.info/smf/index.php?topic=1532.0 is that maple is softer, lighter, and less dense than grenadilla. The reason that the bassoon family uses maple is because big hunks of grenadilla are difficult to find, whereas big hunks of maple are easy to find. However, there are antique Bb soprano clarinets made out of maple.

FA Uebel has a stunning-looking new bass clarinet in mopane wood that looks similar.

They all are nicely crafted instruments. However after my Yamaha YAS-61 pro alto sax was stolen from my locked vehicle in an Albuquerque restaurant parking lot in 1999, since I've subsisted on lesser expensive instruments. If I opt for an alto or bass clarinet, it will most likely be a Bundy or Vito. But, more power to those who go for them.
 
I've mentioned elsewhere that the hard rubber or plastic student Vitos basses from, well, a long time ago, were good enough that I remember. Just no low C.

I've owned and borrowed some high $ horns. However, the two horns that I've had stolen were low $ horns. One was an Amati tenor and the other was my grandfather's Bb soprano clarinet -- I don't remember the brand, but it was a stencil. I'm more disappointed in the latter than the former.
